Case description
You already know the hot dog stand of Sasha and Andy from exercise 1.
Sasha and Andy has decided to improve their business by doing an improvement project, and you are
now hired as consultants for the improvement project. The problem they are facing is the growing
demand for their product during opening hours and especially around lunchtime.
At the same time they have to think about the quality of their product. Every day they have to throw
away hot dogs because the skin has “cracked” during cooking.
Critical questions given by Sasha and Andy are for instance:
• How can utilization be improved?
• How can cycle time be reduced?
• What has to be done to serve 75 customers?
• What has to be done to serve 100 customers?
Use any kind of Lean six sigma tools to support your work, and use the lean principles to motivate
your set up.
You work according to DMAIC and also write your report according to DMAIC. This is in real life a
project lasting several weeks. Report and describe your findings as the project would have
progressed.
You are free to use any kind of tools or methods that are covered in the course material, as long as
you work within the frames of DMAIC.
There will be some requirements given for the project, these will be listed for each phase:
Define
Required delivery:
 Project charter
Possible deliveries:
 SIPOC
 Other?
Describe in the text your thinking and reasoning for the content of the project charter.
Measure
Required deliveries:
 Baseline sigma for the current defect level
 Sigma value for the target defect level
 Process map with important information. You can use the same numbers that you have from
exercise 1.
Possible deliveries
 Stakeholder assessment, interview, market investigation, …
Analyze
Required deliveries:
 Create a «future state value stream map»
 Set up your new process in Simul8
o Data showing customer demand (distribution during opening hours) to validate your
prosess is given in Excel sheet.
 A3 for hot dog cracking problem
o Including DoE, see Excel sheet.
Possible deliveries:
 Root cause analysis of defects, cycle time variation, etc…
Improve
Required deliveries:
 6S as given in classroom exercise. Record you own times.
o T-test of hot dog preparation cycle time before and after 6S
Possible deliveries:
 Any lean six sigma tool that you find appropriate to use for the “New Hot Dog Stand”
Control
Required deliveries:
 XmR chart for the critical prosess indicator you found as the cause of the hot dog cracking
 Process capability indices for the same process indicator
